In the recommended Pool Settings the numbers are there for Plaster, Vinyl, and Fiberglass pools. I will have a concrete pool 100% covered with tile. Would I be OK to use the Plaster Pool numbers or would you tweak any of those for my setup?

You should use the plaster numbers. Most grout behaves a lot like plaster.
