So much of the structure is different, that the only thing reused will be the hole. It can certainly be done, but the cost would be about the same as, and maybe even a little more than building a gunite pool from scratch.
Actually I did this about eight years ago so yes you can. But the work involved will depend on how the existing hole in the ground has been built. We pretty much ended up with a job that was a new build minus the excavation.
