salt level consumption rate

The salt does not get "used up" the only way for the actual salt concentration of the pool to lower is through splash-out/backwashing.

There are actually 2 readings in the aquarite an average and the instantaneous concentration. The instantaneous can vary some while the average should be pretty stable. Do you have the test strips to measure the concentration yourself?

EDIT: How old is your setup? Could the cell be starting to go bad? What is the full list of pool levels to determine if scaling could be affecting the cell?
 
The AquaRite units estimate the salt level from the current to voltage ratio in the cell. Other units work in other ways. One effect of the AquaRite approach is that the salt level starts reading lower and lower than actual when the cell is starting to fail. Adding salt can keep the cell working for a little while, but if you do that you end up with a very high salt level and the new cell will refuse to run when you install it because salt is too high.

Salt can also go down if you have a leak and an auto fill system replacing water without you noticing.
