Pipe return sealant... What is that material?

What is the material the plaster company uses to seal around return pipe where it enters a pool through gunite?

I'm replacing a return fitting and I need to chip into that stuff. It's an off-white color if that helps.

It's just a plaster patch, you can buy at any pool supply...
