Kepping water level low during winter

I would check after each storm.

A more complicated solution would to buy a sump pump with automatic on/off and put it on some plastic chair with weights or something at the height needed to contain the water.

My pool is closed and I have a mesh cover. Any suggestions on how to keep water levels low during winter months (6 inches below skimmer)??

You really dont need to check after each storm. You want the water between 12 and 18 inches below the top of the pool.
Go get a rain gauge and put it in the yard. After each rain fall, look at the guage. Once you get enough rain to where you might want to pump out water, pop a couple of straps on the step end and put a pump on the top stair and pump out the amount of water you want.
