I'm so influenced by you guys that I consider to buy a smoker :cool:
I have never eaten real BBQ or even seen a smoker in reality, to be honest so was the first time I heard of a home smoker when I found this site! So this little baby would sit fine next to our pool next summer, or what do you think!!
Have started to persude my wife of it's benefits over a regular chorcoal grill :-D
It's licences made in Germany and it's a copy of an "Oklahoma smoker" whatever that is? It weigh over 400 pounds, so it's a beast :goodjob:
Anyone familiar with this one?

Here in Texas smokers are pretty prevalent. The design and use are fairly basic. But keep in mind, smokers and charcoal grills peform a bit differently. The use of smokers usually requires much longer cooking times. For example, the average brisket is smoked at 275 to 325 degrees for approximately 10 hours via the smoke box (the smaller box attached to the larger) which you can use any of your favorite hard woods for cooking, ie. pecan, walnut etc. The grill pictured can be used with charcoal but the charcoal is usually added beneath the cooking surface due to burn times and heat generation. Im not a professional cooker but an avid cook and consumer of BBQ. The one you have pictured is a decent grill and should last you for several years given the gauge of the steel etc. I hope this helps.

The type of smoker you have pictured is a offset smoker, as the fire box is offset from the smoking chamber.

My suggestions.

1. keep a smoke log. Record time, meat, temp, amount of charcoal, etc.
2. Prepare the day before.
3. Enjoy the smoke :)

Someone told me that smoking is like an religon in Texas and after searched the net for a few days I think that statement is correct :shock:
There are tons of videos just on youtube. this one for example http://www.youtube.com/watch?v=R1P9FXyqaYA do I find interesting :cool: talking for nine minutes about his smoker, can it be better!! And the music in the beginning is just awesome! I Love dedicated persons in whatever field they roam.

Amazing ribs had very useful information for me Dave :goodjob: It's a jungle when it comes to pick a smoker. But I have decided to go with an offset. And it's all beacuse it's good look :-D Actually it's true I think they are a really beatyful piece of art that will bring some digninty to our pool deck(I have already decided where to put it). But also beacuse I like the fact that it will take some training to get good results with a charcoal/wood smoker if I'm well understood. I think it will suit me well to have to check on the fire every now and when and put some soul into the cooking :-D
what I haven't decided yet is if we gonna add a vertical section to the smoker or not. What I have read is that departure good for smoking fish and sausuges hence the lower temeprature. But the cost for a smoker like that isabove what I can motivate. The one I've posted a pic o is around 2300USD over here and if I add a vertical section I would looking at 800-1000 USD extra.
I will wait for the winter and hoping for a winter discount if there are such on those items.

I can visualize myself bathing and smoking the majority of next summers free time, without doing anything else :-D

Henry we had a charcoal smoker and while it was not a high end one we found it to be a lot of work so we exchanged it for an electric one. You will find the electric and gas smokers a lot more convenient and much easier to clean and use. We have smoked many slabs of baby back ribs, big ribs, briskets, pulled pork butts and chicken all to perfection. I keep logs of times and weights of different types of meats.
