I just put in stabilizer in a sock by my return line yesterday afternoon. Over half of the stabilizer is dissolved. Am I able to swim in the pool with the stabilizer still dissolving in the sock?

As long as the pool is "safe" then yes.
What is safe?
-FC is below shock level
-Water is clear enough so you can see the bottom in the entire pool
CYA dissolving in a sock should not stop swimming.
