I have a Jandy 580 CV cartridge filter and recently plumbed a valve in place of the solid drain cap at the bottom of the filter. Would opening this valve while the pump is running "backwash" the filters?
No, that would be more of a waste setting. The drain is on the dirty side of the filter. So all you'd do is pump water out of the pool, through the pump and out the filter drain.
Backwashing is flow reversal. You can't do that with a cartridge filter.
Gotcha. There have a been a few times where I have had to vacuum when it was extremely dirty. By opening the valve, would it be "vacuuming to waster" and sending all that was vacuumed up directly out?

Most. Maybe all, if the filter was really dirty. It just depends on the resistance on each path -- out the drain or through the filter and back to the pool.
If you're vacuuming up big gobs of stuff, remember it can clog the pump basket and/or slip through and clog the impeller. The basket's easy to remedy. The impeller, not so much.
