How do I make coping to deck joint space when pouring deck

Part of my deck has sunk due to poor planning from the original design. So I have a deck that has tilted down hill. Tried jacking it up, but it would not stay where I put it. Plus it slid back away from the coping! New concrete going to be poured. There's not one straight edge on this pool so I have no idea how to create a joint space between the coping and the concrete form on the curved side. What do builders use?

I assume you are fixing the substrate so the new concrete stays in place.

I was going to put gravel down but I'm all for hearing suggestions.
The real issue was erosion of the soil...I think.
