Is it ok to leave the Polaris in the pool 24/7? It's certainly more convenient to leave it in, but I wonder if the constant exposure to the salt water and sunlight will damage it. Is this ok, or is it better to take it out when not in use?

If it's a few feet underwater the sun won't hurt it for a very, very long time. It may shorten the hose life a little if it floats, but I'll doubt you'll see much difference by leaving it in 24/7 in terms of longevity.
We do, and ours is nine years old. I think leaving it outside the pool in the sun would probably hurt it more.
