I 100% agree, Pex is the way to go. It's very easy to run because of its flexibility over PVC, and it's tough, not thin walled like the old poly piping. Most new house builds use Pex instead of copper, and I've replaced some of the copper in my house with Pex when needed. I know how to sweat...
