I have no problems with my travertine deck. I also have a SWG.

I am no expert by any means. I had a pool/spa installed last year. He needs to put rebar in way of the bench. The bench should be 360 (IMO). Your spillway opening should be 24" or less ( less is better in some cases). My spa is 18" above the deck and makes a perfect seat. I do not have jets...

I have three tanning ledges with a sleeve in the center of each. I should have moved them off to the side. The umbrella pole is smack in the way...

The travertine deck is great. No problems at all. Contractor did a great job. The pool/deck was installed June 2011.

My sw pool is one year old and the travertine deck has no sign of wear/damage.

My (tumbled) travertine deck has polymeric sand between the joints. The gap between pavers is <1/8".

Mine is 18". Very easy to get in and out of. Also use it for seating.

As for the skimmer covers... http://www.carvistlane.com/contents/en-us/d49.html She is in Abita Springs LA and makes all sorts of New Orleans themed crafts. The skimmer covers that I have measure 11.5" in diameter. My deck was made to fit these. You may have to do some retrofitting to install...
