Great to hear you have done the responsible thing and drained the pool in order to make it right.
Since you started out level I would suggest just jacking up each support, do whatever you have to in order to place pavers under them and return to level at each leg, I don't see any reason to take it all down and re-level the whole thing.
Double up on paver under the worst few, or put small rock/gravel under those pavers, it might even be a good idea to dig a hole deep enough for each support to put a few inches of gravel down to level your pavers and set the supports back down on the pavers, you should be good to go.
At least doing it this way if a support does settle again, you don't have to drain the pool to re-level the paver, there is a way to jack it up when full and fix it.
